This mortadella sandwich - inspired by Anthony Bourdain - combines rich, smoky cheese with tangy mustard, pickled onions, and peppery arugula to create the perfect balance of flavors. The butter-toasted soft white buns add a delightful crunch, while the acidity from the pickles and lemon juice cuts through the richness, making each bite irresistibly satisfying.

Serves: 2 people | Time: 15 minutes

Ingredients

  • 4 slices mortadella (thinly sliced)
  • 2 soft white dinner rolls (split in half)
  • 2 slices smoked cheese (for melting)
  • 2 tsp unsalted butter (for toasting the buns)
  • 2 tbsp grainy mustard or Dijon mustard (for tanginess)
  • 2 tbsp pickled onions or thinly sliced raw red onions (for acidity and crunch)
  • 4-5 thin slices of cornichons or dill pickles (for brightness)
  • A handful of arugula (for peppery freshness)
  • 1 tsp lemon juice (to drizzle over arugula)
  • A small pinch of crushed red pepper flakes (optional, for a hint of heat)

Instructions

  1. Toast the Buns:

    • Heat a skillet over medium heat.
    • Melt the butter and place the split buns cut side down.
    • Toast until golden brown and crisp. Remove and set aside.
  2. Cook the Mortadella:

    • In the same skillet, sear the mortadella slices for about 30 seconds per side until slightly crisped.
    • Place a slice of smoked cheese on each piece of mortadella while still in the skillet.
    • Cover with a lid for about 30-60 seconds to melt the cheese.
  3. Assemble the Sandwich:

    • Spread mustard on the toasted sides of the buns.
    • Layer the mortadella with melted cheese on the bottom half of the bun.
    • Add pickled onions, followed by the cornichons.
    • Toss the arugula lightly with lemon juice and a pinch of red pepper flakes (if using).
    • Place the arugula on top and close the sandwich with the other half of the bun.
  4. Serve:

    • Serve immediately while warm.

Tips

  • Balance the Richness: The mustard, pickles, and lemon juice are key to cutting through the fat of the mortadella and cheese.

  • Customize the Spice: If you like a bit of heat, feel free to add more crushed red pepper flakes.

  • Variations: Swap the smoked cheese for provolone or fontina for a different flavor profile.

  • Side Pairings: Pair with a crisp salad or pickled vegetables to complement the sandwich’s rich and tangy notes.
